Fish processing in Uganda: waste minimisation

Smith, Maria DillonThis study focuses on Gomba Fishing Industries (Gomba), a fish processing factory in Uganda, on the shore of Lake Victoria at Jinja. Here they process up to 45 tonnes per day of Nile Perch, mainly into fresh chilled fillets for
export to Europe.
