Enzyme inactivation during spray drying of bovine plasma

Spray drying is a widely used method for drying biological materials such as bovine blood plasma. Enzyme inactivation may be used as an index for assessing the denaturation of other proteins such as immunoglobulins, or properties which are related to this process such as the solubility of the spray dried powders. The fact that the enzyme lactate dehydrogenase (LDH) is present in bovine plasma in significant amounts combined with its suitable heat stability may make it appropriate as an index for predicting other quality characteristics.
